Newcastle’s Native Kitchen

Where Saltbush Meets the Hunter Valley

Seasonal dishes built from the ground up — lemon myrtle from Maitland, wattleseed from the slopes, kangaroo from just over the range. No gimmicks, just what’s growing now.

From Paddock to Plate

How We Build Every Dish

Three simple steps that keep us honest about where your food comes from and why it tastes like this place.

Talk to the Grower

Step 1

Talk to the Grower

We start with a phone call or a dusty ute visit — knowing who’s tending the crop and when it’ll be ready.

Taste What's Seasonal

Step 2

Taste What’s Seasonal

The kitchen tries everything raw first. Finger lime burst, saltbush minerality, wattleseed depth — then we build.

Cook Without Disguise

Step 3

Cook Without Disguise

Char, roast, or serve it close to raw. The ingredient leads; we just don’t get in its way.

Native ingredients aren’t a garnish here. They’re the reason we opened.

Our Foundation

Every Dish Starts With Who’s Growing It

We don’t truck produce from three states away and call it ‘seasonal.’ The saltbush on your plate was cut this week. The lemon myrtle came in yesterday. We know the growers by name, and we know their dogs’ names too. That’s not marketing — that’s just how you cook in the Hunter.

I asked about the saltbush and the waiter knew the farm, the rainfall, and when it was harvested. That’s not service — that’s someone who actually gives a damn.
